Quinoa Salad

Spring has finally sprung! And we're celebrating with this beautiful, fresh and healthy salad that is quick to prepare and perfect for a bbq or lunch with friends.


Makes 6-8


1 cup mixed quinoa

1 cup mint leaves, finely chopped

2 quarters preserved lemon

1 pomegranate

½ cup goats cheese or feta, crumbled

½ cup pistachios, roughly chopped

½ cup slivered almonds

Juice of half a lemon



Rinse quinoa well and cook in saucepan with 2 cups of water. Put the lid on and bring to a rolling boil. Lower heat and cook gently for 15 mins.

Once cooked, remove from the heat, add a splash of good quality olive oil and mix remaining ingredients in.
